The Pazzagli family has been producing a prestigious olive oil from its olive trees in the ‘Cortin’ area of Suvereto since 1800. The “Vecchio Frantoio”, used by the estate and, since the ‘50’s, a museum, is a witness to this. Nowadays, the traditional production techniques for harvesting and pressing the olives is joined to the modern – that is to say, ‘managed control technique’ without the use of pesticides so that the final quality product is genuine. That the product is genuine is proved by the recognition given to the olive oil at various oil and gastronomic exhibitions such as the “Festunta” in Suvereto and the “Castagneto a tavola”. Extra virgin olive oil made “La Cortina”, is the result of following and exact procedure so thast the spicy, appetising taste makes it a pleasing and healthy complement to every Italian recipe and local dish. The oil can be bought directly from the estate the “Vecchio Frantoio” where tasting is also carried out.
